Hi Krystle,
I've recently taken over the Local Food Blog at Webbleyou (www.LocalFoodBlog.com) and in reading the comment archives, I came across yours. You have a great site here! I also enjoyed (and recommend to everyone I come across) Michael Pollan's The Omnivore's Dilemma--it played a big part in crystalizing my interest in local foods.
Looking forward to visiting your site again,
Best,
Sandy Smith

You can boil it for about 10 minutes, but what you should be looking for is for it to be soft but not mushy. Some people like it firmer than others. Taste test it until it's just how you like it.

The chard is double boiled to reduce any bitterness. Ours happened to be bitter, but that might have to do with our local, alkaline soils. Boil once, throw out the water, rinse the chard, and boil again for about 5-10 minutes.

Gotta love those chiles!

I really like roasting the anaheim types and making green chile that can be used for anything from tacos to pasta sauce! I'm trying to order a bunch from a local farmer, but chiles are not as popular in Pennsylvania!

That and okra. Ok, who is hoarding all the okra?

I stumbled upon this looking for inspirations for using the squash from our CSA share (it is a very squash-intense time of year). I'll make it with chard instead of green pepper, as we have the former and not the latter in our share -- we got all the other vegetables as well.

Hi! I found you via OLS and Ali Edwards from the scrapbooking world! I just picked my first swiss chard today (everything's later up here in Canada1) so this recipe will definitely be a perfect one for tonight's supper. I'll be back to visit again - thanks for sharing!

I have yet to try this recipe, but from experience making similar dishes, you may want to try a flour sifter to more evenly distribute the flour. The reason flour clumps that way is because it has become moist and forms a moist outer "shell" while keeping the inside dry. This results in flour lumps that are less that desirable. So, I would try sifting, in addition to any ratio changes, to more evenly distribute your flour.

*off to the store for squash*

Krystle and Hans, this is a great recipe and one that I eagerly tried. I love bowtie pasta and I love summer squash. But I've never had them together before! Your recipe was flawless. I had to do some hunting to find the same kind of squash you used, but the flavor was all worth it. I made two batches, one with chicken and one without, and the results were satisfying for both. The chicken made it a little more substantial and hearty, but the dish sans chicken is equally enjoyable and I love that subtle nutty flavor. Truly enjoyable! :-)
